The History of Dum Biriyani

The word “Dum” originates from an ancient Persian cooking technique. Persian cooks developed a method where food was slow-cooked in a sealed pot, allowing ingredients to cook in their own steam and natural juices. This technique preserved flavours, tenderness, and aroma, resulting in rich, deeply infused dishes.

This dum-style cooking was later introduced to India by the Mughals, who brought with them a refined culinary tradition that included pilaf, kebabs, aromatic rice dishes, and biriyani.

The Arab Influence Behind Malabar Biriyani

The story of Malabar Biriyani is closely tied to the history of the Malabar Coast of Kerala. Arab traders who visited the region for spice trade settled here and blended their culinary traditions with local flavours, creating a biriyani that is mild, aromatic, and rich in taste.
